Method

  1. Marinate the Chicken:
Combine lime juice, cumin, chili powder, smoked paprika, garlic, oregano, salt, and pepper.
Coat diced chicken with marinade and refrigerate for 30 minutes.
  2. Cook the Chicken:
Heat a skillet over medium-high heat.
Cook marinated chicken until golden brown and fully cooked (internal temp: 165°F).
Drain excess liquid and set aside.
  3. Prepare the Base:
Cook rice using chicken broth for flavor.
Add lime juice and chopped cilantro, then fluff with a fork.
  4. Assemble the Burritos:
Warm tortillas briefly in a skillet.
Layer rice, beans, chicken, cheese, and toppings (tomatoes, cilantro).
  5. Roll the Burritos:
Fold the bottom up, then the sides inward.
Roll tightly from the bottom up to seal.
Wrap in foil if serving later or for takeout-style burritos.
  6. Add Sauce and Serve:
Drizzle with your choice of salsa, guacamole, or sour cream.
Serve with lime wedges and a side of Mexican rice or corn salad.

Notes

  • For extra flavor, grill chicken for a smoky finish.
  • To avoid soggy burritos, drain all liquids before assembly.
  • For healthier versions, use whole-grain or low-carb tortillas and substitute sour cream with Greek yogurt.
