Method
 

  1. Remove steak from the fridge 30–45 minutes before cooking to reach room temperature.
  2. Pat the steak dry with paper towels.
  3. Season with salt and pepper, or marinate (2–8 hours in the fridge).
  4. Preheat grill (450–500°F) or skillet until very hot.
  5. Cook steak 4–6 minutes per side, depending on doneness preference (125°F rare, 135°F medium-rare, 145°F medium).
  6. Remove from heat, let rest 5–10 minutes.
  7. Slice thinly against the grain before serving.
